Good reasons to get fat at Fat Lulu’s

Running its business for a period of four months up to this point in time, Fat Lulu’s is something of a chimera. Having taken over the premises of formerly well-received Five & Dime cafe at River Valley Rd, Fat Lulu’s is a rebrand of the former cafe by the same owners in serving up small plates and plated desserts.

The food section is managed by Chef Sam Chablani, alumni of Culinary Institute of America who has his experience cooking at New York Michelin-starred kitchens as well as Lolla’s in Singapore.

Working in close partnership with him is Pastry Chef Pang Ji Shuang, known by the moniker “Song”, who is in charge of the desserts at Fat Lulu’s. Both chefs boast of equal competence in terms of their different areas of specialty in the culinary field.

Let us have a look at the dishes conjured by Chef Sam and Chef Song.

Spicy Pork Iberico Satayay

What an interesting extension of the dish name, that the in-house Iberico pork satay is given the name “Satayay”. Priced at $12 for five skewers, the meat is grilled to an aromatic degree of charred-ness without being burnt. The effect of marinade gives the meat a spicy and sweet flavour so delicious that the dish is served without the need for gravy to be paired with it.

Spicy BBQ Full Rack Pork Ribs ($28)

Contrary to the usual pork ribs which are more towards the sweet side, Chef Sam’s marinade of kecap manis sauce with coriander and lime gives the ribs a combination of sweet, savoury and tartness all at one go.

Fried Chicken with Pancakes ($22)

Instead of the common Fried Chicken with Waffles, Chef Sam has tweaked the dish by pairing fried chicken with pancakes instead. The dish is drizzled with homemade sweet chilli sauce and served with apple coleslaw and coriander leaves.

Note that this dish is only available on weekends as part of Fat Lulu’s brunch menu.

Childhood ($16)

This dessert item is as interesting as the connotative meaning of its name. Apparently, “Childhood” is a playful dessert presented as a peanut popsicle smashed on the plate. The entire dish looks like a handiwork of an angry child, but is a masterpiece that balances the sweet and citrusy flavours of chocolate cookie ice-cream and raspberry granita.
